Chopis has been used as a traditional Korean flavor. It is powdered
fruits and skin of chopis. Ingredients of pericarps of chopis contain sanshoolI as a sour compound,
and it is called Jepi, Jompi, or Cheoncho in herb medicine.
It is used as seasoning flavor and herb medicine, and can remove stench of fishes and meat,
bloody smell of fishes, smell of greens and unpleasant smells of food. It adds savory taste of food,
prevents spoilage of Kimchi and continues storage period.
It helps digestion by keeping your stomach warm and is used as a herb medicine.
The most common use of powdered chopis is for cooking such as loach soup and fish
pot stews, meat cooking and kimchi.
